The final answer that worked for us was referenced in this post:
http://answers.microsoft.com/en-us/office/forum/office_2010-access/access-2010-sp1-you-receive-random-crashes-in/d2bf6175-075a-4a12-a2b1-f55d40af271b

And a patch from Microsoft can be downloaded here:

Microsoft

It appears to be a known issue with Microsoft having to do with Microsoft Access 2010 SP1.
Much of the issues reported seem to hover around 64bit versions, but that was not the case with us – we found this issue running 32bit Microsoft Access on Windows 7 Professional 32bit.

The fix it turns out was relatively straight-forward and worked for us in EVERY instance – simply open your corrupted database from the command prompt along with the /decompile switch (see EXAMPLES), then close Access, and re-open your database normally. All should be well.
(If running Windows 7, simply running Microsoft Access from the Start Search field with the /decompile switch works as well: Click Start, type msaccess.exe /decompile)

NOTE: In our experience, many times, it will take opening the database in this manner (database path /decompile) a few times before it starts working again…
NOTE2: You must also ensure the options are set to Compact and Repair on close, if this is not set, the /decompile appears to have NO effect.

Another suggestion was:

Open the Microsoft Access application alone, not opening a file.
File, Options, Add-ins
Click the Go… button at the bottom of the window next to the Manage: COM Add-ins drop down list
Un-check the check boxes next to the add-ins you can stand to live without and click OK

There appears to be a hotfix available for this issue as well now:
http://support.microsoft.com/kb/2596585
http://support.microsoft.com/kb/2625046

EXAMPLES
———
Open a command prompt (Start button, All Programs, Accessories, Command Prompt)
Type the full path to the database and follow it with /decompile and hit enter.

/decompile

EXAMPLE:
'C:UsersMeDocumentsMyCoMyTeamSystemsMyDB.accdb' /decompile

Note: You can also open Access itself in /decompile mode and then the next database you open will be decompiled.

EXAMPLE:
'C:Program FilesMicrosoft OfficeOffice14MSAccess.exe' /decompile
